Crockpot Potato Soup and Gastritis

I have severe Gastritis. 5 months ago I thought at minimum I had an alien in my stomach, at most I thought I was dying. Hospital stay showed that my years of acid reflux had turned into gastritis. Plus side is I have lost 20lbs in 4 months, down side is that I can’t eat hardly anything. Every time I try to go back to any regular food that I enjoy, have a glass of wine or ingest anything new, I get a flare up. This happened this weekend. I was getting sick and my essential oils supplier wanted me to try ingesting some in pill form. Now, I LOVE essential oils and truly believe in their benefits. I have not however ingested them before. I know many people who have and have seen huge benefits. But again, this is apparently another thing that I ((due to my gastritis)) am not able to benefit from. I took one pill yesterday and by today I was in full flare up mode.

So I decided to make crockpot potato soup for the first time ever. Being that it is one of the only things I can have. The 1 banana wasn’t very filling.

Found this recipe on Pintrest. IT WAS WONDERFUL.  Super easy and delicious.
In the beginning I did add 1 cup milk (I use 0%) and 1 cup cheddar cheese in addition to the recipe.
Then added chives and a little more cheese in my bowl before eating.

1 (30 oz.) bag frozen hash-brown potatoes (I use the squared, southern style)
2 (14 oz.) cans chicken broth
1 (10.75 oz.) can cream of chicken soup
1/2c chopped onion
1/3 tsp. ground black pepper
1 (8oz) package cream cheese (softened)
Garnish: minced green onion (I add cheese here as well, and I'd add bacon if I had it)


I a slow cooker, combine potatoes, broth, soup, onion, and pepper. 
Cover, and cook on low for 5 hours.
Stir in cream cheese, cook 30 minutes, stirring occasionally, until combined. 
Garnish with green onion if desired.
